Black Truffle Risotto

Creamy, rich, decadent and entirely vegan, this Black Truffle Risotto is incredibly delicious and made entirely without dairy. Once again, it’s so easy to live well, eat all your favourites and miss out of nothing when you’re Vegan. For me this is a weekend staple and works really well for dinner parties and impressing the most cynical non-vegans out there. Spread the LOVE!

My Black Truffle Risotto was made with Organico Porchini Ristto blend (Ocado, Sainsburys and Whole Foods, and once boiled I added the Cashew Cheese, Truffle and topped with almond cream and some fresh thyme from our garden.   Total Prep time: 15 minutes
